During the summer, many fruits ripen, which also got into traditional Slovak recipes. Among our most popular dishes are also cooked dough dishes, where besides gnocchi, noodles and others, potato dumplings with fruit are sought.Cherries, strawberries, apricots, plums, blueberries can be used. They are served sweet and as a topping/streusel curd, nuts, poppy seed or bread crumbs are used.
For the dough:
400 g flour, semi-coarse
4-5 pcs potatoes, boiled in their skins
½ teaspoon of salt
1 pc of egg
80 g of breadcrumbs
80 g of powdered sugar
50 g of walnuts, ground
120 g of butter, warmed up
strawberries, cherries, apricots, plums (depending on the season)
Cook the potatoes in their skins, after cooling peel and grate them on a fine grater. On a board, knead a stiffer dough from all the ingredients: flour, eggs, potatoes and salt. Roll out the dough soon so as it won´t become runny. Cut it into squares, place washed and drained fruit into every piece and form it into the shape of a ball. Cook in slightly salted boiling water for about 7 minutes until they float to the surface. Take them out but do not rinse. Anoint the finished dumplings with melted butter, sprinkle with topping - cream cheese with sugar, ground poppy seeds with sugar, ground nuts with sugar or fried breadcrumbs.
Procedure for the crumbly topping - streusel:
Fry the breadcrumbs on a dry pan until pink. Sweeten the fried breadcrumbs with powdered sugar, you can add minced or chopped walnuts, let them heat and sprinkle the still hot, buttered dumplings.
